How to make battered mussels

How to prepare fried mussels

Clean and open the mussels: pass them under running cold water, eliminating those with a broken shell. Remove all impurities from the shells with the blade of a knife or with a steel wool (1). Take the mussels, remove them from the shells and pass them one at a time in the batter (5). Fry in abundant boiling seed oil and turn them often, with the help of a skimmer, for a couple of minutes. Drain them as soon as they are golden brown (6).
